Clean Comfort Food
One of the great things about cooking and eating clean is all the things you can start to make when you let your creative juices flow. It started snowing outside again and the bitter cold weather made me long for a warm, comfort food kind of meal. I decided to throw together a breakfast casserole with what I had on hand. It came out bubbly and smelling delicious! This casserole will give me four servings! Yum!
Here is what I put together:
Turkey, Cheese and Egg White Delight
1 Cup of cubed Ezekiel bread (Gluten free bread could work here too)
2 slices of cooked organic smoked turkey breast cubed (Turkey sausage, turkey bacon, etc would work well here too)
1 teaspoon organic Italian seasonings
1/3 cup organic skim milk
1/3 cup egg whites
1/2 cup organic shredded mozzarella cheese
1/3 cup organic salsa
1 plum tomato sliced
organic chili pepper to taste
Fresh basil
One: Preheat Oven to 375. Lightly mist a small casserole dish with organic olive oil cooking spray and line the bottom with the cubed bread.
Two: Add half of the milk and the chili pepper to a food processor and mix adding the egg white mixture, the rest of the milk, half the cheese, the salsa, and the Italian seasoning. Pulse until well mixed.
Three: Pour mixture over bread cubes and then top with turkey cubes. Finish with an even layer of the Roma Tomatoes. Sprinkle the top with the remaining cheese and bake until puffed and golden brown on the top – about 40 minutes. Sprinkle with basil. Serve hot or at room temperature.
